Lemon Slice Recipe
Our Lemon Slice Recipe with its tangy and refreshing flavour of lemon is a popular crowd-pleaser. It provides a perfect balance of sweet and sour, making it a delightful treat.It is a beautifully layered dessert, with a buttery biscuit base and a tangy lemon top, making it a perfect treat for any occasion. Enjoy your baking!
Ingredients
For the Base
- 250 gm plain sweet biscuits
- 90 gm butter, chopped
- ½ cup (125ml) sweetened condensed milk
- 1 teasp finely grated lemon rind
- 1 tbsp lemon juice
For the Lemon Icing
- 1¼ cup (200g) icing sugar
- 15 gm butter
- 1 tbsp lemon juice
- 110 gm desiccated coconut to garnish
Instructions
- Grease a 19cm x 29cm slice pan, line base and two long sides with baking paper, extending paper 5cm over long sides.
- Process 200g of the biscuits until fine. Chop remaining biscuits coarsely.
- Combine butter, milk, rind and juice in a small saucepan, stir over low heat until smooth.
- Combine processed and chopped biscuits in a medium bowl, stir in butter mixture. Press mixture firmly into pan refrigerate, covered, about 20 minutes or until set.
- Meanwhile, make lemon icing by stirring ingredients in a small heatproof bowl over a small saucepan of simmering water until smooth.
- Pour the liquid onto the biscuit crust and sprinkle with the desiccated coconut
- Allow your lemon slice to cool in the fridge for at least 4 hours for icing to set.
