Ingredients
  

  • 3 cups self-raising flour
  • 1 cup lemonade (Sprite)
  • 1 cup pouring (double) cream

Instructions
 

  • Preheat your oven to 220°C (200°C fan-forced). Lightly dust a baking tray with a bit of extra flour.
  • In a large bowl, sift the self-raising flour. This will help make your scones light and fluffy.
  • Pour in the lemonade and cream.
  • Using a knife, gently fold the ingredients until just combined. It’s important not to overmix as it can make the scones tough.
  • Turn the dough out onto a lightly floured surface. Knead gently until smooth.
  • Pat the dough into a 2cm-thick rectangle. Using a round cutter, cut out your scones and place them on your prepared tray.
  • Bake for 10-15 minutes or until golden and well risen.
  • Serve warm with jam and a dollop of cream. Enjoy!
