Ingredients
  

  • 1 onion finely chopped
  • 2 tbsp butter
  • 1 cup risotto rice
  • ½ cup white wine
  • 2 cups hot vegetable stock
  • 1 cup wild mushrooms, finely chopped
  • ½ cup grated parmesan
  • salt and pepper to taste
  • 1 tbsp chopped fresh herbs
  • ½ cup plain flour (or gluten free flour)
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs (or gluten free crumbs)
  • vegetable oil for frying

Instructions
 

  • In a large pan, melt the butter over medium heat. Add the onion and cook until it becomes translucent.
  • Add the risotto rice to the pan and stir until the grains are coated in the butter.
  • Pour in the white wine and let it simmer until the liquid has almost completely evaporated.
  • Gradually add the hot vegetable stock, a ladle at a time, stirring constantly until each ladle of stock has been absorbed by the rice before adding the next.
  • Once all the stock has been absorbed and the rice is tender, stir in the chopped wild mushrooms, grated parmesan, chopped fresh herbs, salt, and pepper.
  • Remove from heat and allow to cool.
  • Once the risotto is cool enough to handle, shape it into balls about the size of a golf ball.
  • Set up a crumbing station with three bowls - one for the flour, one for the beaten eggs, and one for the panko breadcrumbs.
  • Roll each risotto ball first in the flour, then dip in the egg, and finally roll in the breadcrumbs until fully coated.
  • Heat the vegetable oil in a deep fryer or large, deep saucepan to 180°C (350°F). 
  • Fry the arancini balls in batches until golden brown and crispy.
  • Drain on paper towels.
  • Serve the Wild Mushroom Arancini hot, with garlic aioli for dipping.
